Banana Protein Pancakes

Ingredients:

1 egg, beaten
-
1 medium banana
-
1/4 tsp cinnamon powder

A pinch of salt
-
A splash of vanilla essence
-
2 Tbs whey protein isolate or pea protein powder

1 Tbs coconut oil for cooking
-
Extra berries, banana and yoghurt to serve

Method:
1. Mash all ingredients well (except for extra banana and berries) and set aside.
2. Heat coconut oil over a medium frying pan and drop TBS of mixture onto hot frying pan.
3. Flip over to other side when bubbles appear. Cook for another minute or two.
4. Serve pancakes with extra berries and banana and a dollop of own choice yoghurt.
