Chocolate Chia Skin Glow Mousse

This creamy chocolate chia mousse is more than just a treat — it’s packed with goodness from cashews, chia seeds, dates, cacao, and coconut cream. Together they provide plant-based protein, fibre, healthy fats, and a range of key nutrients including magnesium, calcium, zinc, and antioxidants to support energy, mood, digestion, and overall vitality, all naturally sweetened with dates and stevia for a nourishing dessert you can truly enjoy.
Ingredients:

1 cup cashews (soaked in Celtic salted water for 6 hours, rinsed, drained and slowly dehydrated in oven for 3hrs - this activates and makes them easier to digest and more nutritious.)

1 cup coconut cream

2 1/2 Tbs chia seeds

6 medjool dates, pitted

pinch sea salt

1 tsp vanilla extract

2 Tbs cacao

Method:
1. Soak chia seeds in coconut cream with sea salt, vanilla and cacao for 3 hours.
2. Place cashews in high-speed blender or processor and blend on high until they turn into powder.
3. Add in dates and soaked chia/coconut cream mixture. Blend on high until smooth and creamy.
4. Place in freezer overnight.
5. To serve, remove from freezer, let sit for five minutes, then serve with fresh berries.
