Creamy Mango Pudding

This light and creamy mango pudding is the perfect balance of tropical sweetness and guilt-free indulgence. Made with fresh mango, silky coconut cream, natural monk fruit sweetener, and a touch of gelatine for the perfect set, it’s a refreshing dessert that’s both wholesome and delicious.

Ingredients:

  • 600g fresh mango pieces

  • 1 cup coconut cream

  • 3 Tbs gelatine powder

  • 1 tsp fresh, grated ginger

  • 4 Tbs cold water

  • 3 Tbs monk fruit sweetener or honey

  • Optional: fresh mint, pomegranate arrils, coconut chips and coconut milk to serve

Method:

1. Place the mango in a food processor blender and blend until smooth.

2, Combine the gelatine and water and mix well. Let the mixture 'bloom' for a few minutes.

3. Add the gelatine mixture, coconut cream, ginger and sweetener to the mango and blend on high for 1 minute. Don't worry if it's lumpy as it will smooth out at the next step.

4. Place the mixture into a pot and turn onto medium heat, whisking continuously for a few minutes until hot but not boiling and lumps have dissolved. 

5. Remove from heat and pour into serving bowls. Place in fridge overnight until set.

6. Serve with extra coconut milk, pomegranate arrils, fresh mint and coconut flakes.
