Organic Activated Pesto

This delicious pesto is made on a base of activated nuts which means it's gentle on digestion and contains a higher concentration of vitamins and minerals. If you tolerate dairy, feel free to substitute parmesan cheese for the nutritional yeast flakes.

Ingredients:

  • 1/2 cup activated nuts (pine, macadamia, walnuts and Brazil nuts work well)

  • 2 cups packed basil leaves 

  • 1/2 cup nutritional yeast flakes

  • 1 tsp Celtic sea salt

  • 3 garlic cloves

  • 1/2 cup extra virgin olive oil

Method:

1. Place nuts in a food processor or Thermomix and blend on high for 30 seconds until they form a fine powder.

2. Add in all remaining ingredients and blend for 30 seconds scraping down the sides if needed and re-blending for a further few seconds.

3. Place in a glass jar and store in fridge for up to 1 week or in the freezer for up to 6 months.
