Organic Red Lentil Soup

Organic Red Lentil soup makes the perfect nourishing winter lunch or dinner. Here I’ve used slow cooked chicken broth to add in some gut healing goodness. Red lentils are rich in minerals…especially copper as well as plant based protein and complex carbohydrates. One cup of cooked red lentils contains 55% RDI of copper which is essential for forming red blood cells and helping the body absorb iron.

Ingredients:

  • 2 cups of organic red lentils, rinsed

  • 1 onion, diced

  • 2 cloves garlic, crushed

  • 1 carrot, diced

  • 300g pumpkin, peeled and diced

  • 2 large tomatoes, diced

  • 1 Tbs olive oil

  • 1 tsp cumin and 1 tsp turmeric powder

  • 2 celery stalks, finely chopped

  • 5 cups chicken broth

  • 3 tsp sea salt

  • Juice of half a lemon

Method:

1.  Sauté onion, garlic, celery, carrot and spices on medium heat for five mins.
2. Add in remaining ingredients and bring to the boil.

3. Turn down to simmer for 30 mins.
4.  Serve warm with crusty sourdough bread. Yum!
