Rainbow Quinoa Bowl

This vibrant, nutrient dense bowl brings together root veggies, herbs, tahini and quinoa. Quinoa is a complete protein, meaning it contains all 9 essential amino acids for health.

Its’s rich in healthy fats from ghee/tallow, tahini and pine nuts, providing long lasting energy and supporting hormone and brain health. The colourful mix of veggies gives a wide range of antioxidants and fibre to support gut and immune function.

Ingredients:

  • ​3 cups cooked quinoa

  • 2 cups cubed veggies (beetroot, pumpkin, capsicum, onion, sweet potato, artichoke, parsnip, or any combo of these)

  • 2 Tbs ghee, tallow or olive oil (for roasting)

  • 3 tsp Celtic sea salt

  • 1 cup chopped fresh herbs (parsley, coriander, mint)

  • 2 Tbs pine nuts, roasted

  • 3 Tbs tahini

  • 3 Tbs lemon juice or apple cider vinegar

  • 2-3 tsp honey

Method:

  1. Combine veggies with oil or tallow/ghee and 1.5 tsp salt in a casserole dish and roast at 200 degrees Celsius for about 30 mins.

  2. Mix the quinoa, veggies, fresh herbs and pinenuts together and add 1 tsp salt - mix well.

  3. Make the tahini dressing by mixing half tsp of salt, tahini, lemon juice or ACV and honey with enough water to make a smooth and runny dressing.

  4. Serve the rainbow quinoa in bowls with a drizzle of tahini dressing over the top.
