
Wild Blueberry Spelt Muffins
These wild blueberry spelt muffins are a wholesome twist on a classic treat, bursting with flavour and packed with nutrients. Ingredients:

1 cup wild blueberries

1 1/2 cups wholemeal spelt flour

1tsp baking powder

1/2 tsp bicarb

1/4 tsp salt

1 tsp cinnamon

1 cup plain or coconut yoghurt

5 Tbs coconut oil

5 Tbs honey
-
2 Tbs water
-
2 eggs
-
2 tsp vanilla extract

Method:
1. Combine dry ingredients in a bowl and mix well.
2. Fold in wet ingredients and gently combine.
3. Grease 12 large muffins moulds and pour mixture evenly into each mould.
4. Bake for 25 mins at 180 degrees until cooked through.
5. Enjoy warm or cold.
